Spaghetti Bake

Ingredients:

Spaghetti sauce
ground meat
chopped peppers,onions,mushrooms
pasta - angel hair

Cook the ground meat, add veggies and meat to sauce and cook  until it is nicely smelded together, 20 minutes. Cook noodles and stir into sauce. Place into a casserole dish and cook at 350 for 20 minutes and serve like lasagna. We top ours with a thick layer of cheese and broil for a few minutes, yum I'm so hungery now!

Herb Roasted Tomatoes

Ingredients:

1 tbsp fresh chopped oregano leaves
2 tbsp fresh chopped parsley leaves
2 tbsp minced garlic
1 1/2 tsp pepper
1 tbsp sea salt
3 tbsp oil
8 Roma tomatoes
1 cup grated Parmesan cheese

Preheat oven to broil. In a large bowl mix spices and oil, toss in tomatoes cut in half length wise until coated. Line baking sheet with parchment paper and place tomatoes cut side up. Sprinkle cheese on top of tomatoes. Put under broiler until cheese is melted and tomatoes caramelize. Serve and enjoy!

Homemade Pizza Sauce 

Ingredients:

2 cups Spagetti sauce
2 tsp oregano
2 tsp chili powder
1 tsp hot sauce
salt/pepper to taste

Mix all ingredients together and add more chili powder for a spicier sauce. Add a few tbsp sugar for a sweeter sauce. You can take canned tomato soup and turn it into pizza sauce or cook down fresh tomatoes out of the garden and make sauce the same way. This recipe also freezes great! I like to break it up into small batches and freeze it in saved butter dishes that I mark on top and date. That way you have premade sauce when ever you need it. This recipe can be doubled or tripled just keep the spice ratios the same. Sometimes when you use tomatoes from the garden you will need to reduce the sauce to thicken it to the consistency that you like. The other option for thickening is to add a tsp of tomato paste.

Spicy Homemade BBQ Sauce

Ingredients:

1 cup ketchup
1/2 cup honey
1/4 cup soy sauce
5 tbsp hot sauce
1/4 cup finely chopped onions
Salt/Pepper to taste
3 tbsp garlic powder
4 tbsp chili powder


Mix together and brush on meat while grilling and enjoy!
This makes enough for about 5 pieces of meat
